Q: I see that you do this kit with either Carbon Steel or Stainless Steel, what are the pro's and con's of each material?
A: Carbon steel blades are generally harder and will stay sharp for a longer period of time (although may be more difficult to sharpen due it being so tough). Stainless steel blades are obviously more resistant to rusting.
